Who doesn't love a gooey, chocolate brownie?!
I mean, there are a few aliens out there, but the majority of humans definitely do.
This recipe took me a few different attempts to perfect, but, totally worth it...they're gooey, super yummy, AND...healthy!?
Vegan, Gluten Free, & No added sugars
Ingredients:
1 15oz can chickpeas, drained and rinsed
1/2 cup pure maple syrup
1/2 cup natural nut butter
1/4 cup unsweetened applesauce
1 tsp vanilla extract
1/4 cup coconut flour
1/4 cup cocoa powder
1 tsp cinnamon
1 tsp baking soda
2 tbsp dairy-free dark chocolate chips, divided
Instructions:
Preheat oven to 350 degrees F and set aside a nonstick or greased 8x8 baking pan.
Add the chickpeas, maple syrup, nut butter, applesauce, and vanilla extract to a food processor. Process until fully combined.
Then add the coconut flour, baking soda, cocoa powder, and cinnamon to the mixture and begin to process again. *Scrape the sides of the processor with a spatula as needed*
Process until smooth, then remove the lid and blade, and mix in 1 tbsp of chocolate chips, stirring them throughout the mixture.
Pour the brownie mixture into the 8x8 pan and evenly place the remaining chocolate chips on top of the brownie mix. *So you can get that sexy, bakery aesthetic*
Bake in the oven for 20-25 minutes, or until the brownies pass the 'fork test' and are fully baked through. Let them cool for 20-30 minutes, cut into 9 even brownies, & enjoy!
