Mango Avo Salsa

Summer=Salsa

This recipe is the perfect combination of sweet & savory. Take it to your next summer picnic, BBQ, etc. & I guarantee it'll be a hit!

It's quick & easy to make, & you can eat it with so much more than just tortilla chips (though, that's obviously never a bad move).

Try it for breakfast with scrambled eggs in the morning or on toast, as a salad topper to replace your dressing, paired with fresh grilled fish, or you can even take a spoon straight to the bowl & eat it as is! (trust me, it's that good!)

 

Mango Avo Salsa Recipe:

Ingredients: (for 2 GENEROUS servings)

  • 1 medium avocado

  • 1 cup fresh mango, diced

  • 1/2  medium red onion, diced

  • 1 large beefsteak or beef tomato

  • 1 tbsp apple cider vinegar

  • 1-2 tbsp cilantro, chopped

  • 1 tbsp lime juice (or half of a fresh lime, squeezed

  • 1/4 tsp garlic powder

  • 1/2 tsp sweetener of choice (I use Truvia...a stevia blend)

  • 1/4 tsp sea salt

Instructions:

  1. Dice the tomato, onion, and mango. Transfer to a medium-size serving bowl.

  2. Remove pit from avocado & dice into 1/2" cubes. Add the avocado to the bowl and stir everything together with a spoon.

  3. Add all remaining ingredients and mix well.

  4. Chill in the refrigerator for a minimum of 1 hour, serve with tortilla chips, over salad, etc. & enjoy!

TIPS:

*The longer the salsa chills, the more flavorful it becomes (but don't chill for more than 4-5 hours before serving, to avoid the avocado browning). OR, you can chill for longer & wait to add the avocado right before ready to serve.

*Add cilantro to desired taste.


Approximate nutritional info (per 1/2 of the salsa):

190 calories, 10g fat, 24g carbohydrates, 7.5g fiber, 3.5g protein.
