Gluten-free brownie bites made with healthier ingredients than your typical store-bought box brownies or bakery finds.
You wouldn't even notice that these brownies are made with healthier ingredients and are gluten-free because they're so melt-in-your-mouth delicious!
Gluten-Free Salted Coconut Brownie Bites
Ingredients:
· 1 ½ cups almond flour
· ¼ cup coconut sugar
· ¼ cup cocoa powder
· 1 egg + 1 egg white (or 1 + ½ flax eggs)
· 3 tbsp maple syrup (or honey) *maple syrup is linked to my favorite sugar-free option that I use in all my recipes...only 25 calories per serving & 7g fiber!!
· ¼ cup melted coconut oil
· 1 tsp baking soda
· ½ tsp cinnamon
· ¼ tsp sea salt
Instructions:
Preheat oven to 350 degrees F and line a mini muffin tin with muffin liners (recipe makes 24 brownie bites); set aside.
In a large mixing bowl, combine the egg and coconut sugar. Beat until fluffy and airy (for about one minute).
Add all remaining ingredients to the bowl and mix together with a large spoon or spatula. Fold everything together until well combined.
Scoop the brownie mix into each lined muffin tin, filling each one a little more than ¾ of the way full, leaving a little room for them to grow while they bake.
Bake in the oven for 15 minutes, or until you can stick a toothpick through the middle of a brownie and it comes out clean.

Notes:
*If you prefer full-size brownies, you can pour the brownie mixture into a greased 9x13 or 8x8 baking dish (depending on how thick you like them) instead. Use the same measurements of each ingredient, just expect to have to bake for 10-15 minutes longer.
*Store leftovers in an airtight container for up to 5-6 days at room temperature.
