So good you'll forget you're eating veggies.
...trust me, this is one of my fool-proof ways to sneak more veggies onto the hubs' plate.
So, ladies, if you not only want to make this bangin' recipe for yourself, you can also trick your man into eating more veggies, or your toddler, whatever...
Anyways, here's the recipe!:
Crispy Gluten Free Buffalo Cauliflower Bites
Ingredients:
· 4 cups cauliflower florets
· 2 eggs (olive oil substitution is possible for vegan option)
· ½ cup oat flour
· ½ tsp garlic powder
· ½ tsp chili powder
· ½ tsp cumin
· Pinch of sea salt & black pepper
· 2 tbsp grated parmesan cheese
· 2 tbsp hot sauce
Instructions:
Combine the oat flour, spices, salt & pepper, and grated cheese together in a medium-size bowl. Stir thoroughly to mix well.
Beat the eggs together in a separate medium-size bowl. Set both bowls side by side to form an ‘assembly line’.
Take each cauliflower floret by hand and twirl in the beaten eggs to lightly coat, then toss in the ‘breading’ mixture to coat entirely.
Once all florets are coated with the breading, transfer into the basket of your air fryer. Set the fryer to 400 degrees F and bake for 20-22 minutes, or for 25 minutes if you want them extra crispy.
Once they’re done in the air fryer, remove the florets from the basket and transfer to a large bowl. Drizzle the hot sauce over the florets and toss around to evenly coat the florets. Serve immediately & ENJOY!
NOTES:
*For a vegan option, omit the grated cheese and replace the eggs with extra virgin olive oil to coat the florets. (You’ll need ¼ - ½ cup of olive oil).
*If you don’t have an air fryer, you can bake the bites in an oven at the same temperature, they just won’t come out quite as crispy.
