A yummy, healthy holiday treat.
This cookie dough bites recipe:
is quick & Easy
doesn't require baking
is gluten-free
can easily be made vegan by omitting the white chocolate chips
Apple Pie Cookie Dough Bites
Ingredients:
1 cup + 1 tbsp oat flour
1/2 cup smooth almond butter
3 tbsp pure maple syrup
1 tbsp coconut oil, melted
1 tsp apple pie spice
1/4 tsp cinnamon
1 1/2 tbsp white chocolate chips
Instructions:
Combine all ingredients *except the white chocolate chips* into a medium size bowl and stir/fold together until well combined and cookie dough forms.
Set aside a parchment lined cookie sheet, then wet your hands to form the dough into 12 even size balls, transferring each ball to the cookie sheet.
Melt the white chocolate chips in a small cup in the microwave until fully melted and smooth.
Using a knife, scoop out the white chocolate little by little to drizzle on top of each ball.
Place the cookie sheet in the freezer and freeze for one hour.
Remove from freezer, let thaw & enjoy!
Notes:
*You can substitute any nut butter of choice for the almond butter.
*You can substitute honey for the syrup.
*Heat the chips in 30 second increments, remove and stir, then heat for 30 more seconds, etc.; and repeat the process until the chips are fully melted.
*Left over balls stay good for 4-5 days when kept in an airtight container in the fridge.
*You can also keep them frozen; just let thaw before eating/serving!
