4 Ingredient Vegan Coconut Date Delights


Dates are one of my favorite things to have on hand to use in my recipes as a natural sweetener & the perfect sticky situation to use as a base to mold other ingredients together. Plus they're great to have around to satisfy a sweet tooth.

Yes they're high in calories and sugar, *natural sugar, that is*, but like anything else, consume in moderation & you'll get the benefits and satisfaction from them.

These Coconut Date Delights are one of my favorite sweet treats. They're SO good, healthy, are made from only 4 ingredients, & don't require baking!

...doesn't get much better than that!

Try out the recipe & enjoy as a high-energy #snack, afternoon pick-me-up, or something to satisfy your sweet tooth.

 

Ingredients:

  • 1 cup whole Medjool dates (approximately 8 dates, pits removed)

  • 1 cup raw, whole almonds

  • 1/4 cup unsweetened shredded coconut

  • 1 tsp cinnamon

Healthy vegan treats

Instructions:

  1. Soak the almonds in warm water for one hour, then strain.

  2. In a food processor, blend together the dates and almonds, until well combined.

  3. Evenly add in the shredded coconut and cinnamon to the mixture and pulse until fully combined.

  4. Remove the mixture from the processor into a medium-size bowl.

  5. Roll the mixture into 12 even-sized balls.

  6. Freeze the delights for at least one hour and enjoy!

Tip: For best freshness, store leftover delights in an airtight container in the fridge for up to a week.


Nutritional info (per 1 delight): 115 calories, 7g fat, 14.5g carbs, 2.5g fiber, 2.5g protein
